Southern - Style Baked Beans

Serves up to 10 - 18 


8 slices of bacon, halved 

1 med onion, cut into small dice 

½ med green pepper, cut into small dice 

6 cans (398ml) pork and beans 

¾ cup barbecue sauce 

½ cup brown sugar 

¼ cup Bourbon Maple or Traditional 18 year style Dark Balsamic 

2 tsp dry mustard or 2 Tbsp Dijon 



Adjust the oven rack to lower middle position and heat oven to 325F. 

Fry bacon in a large deep fry pan until bacon has partially cooked and released about a ¼ cup of drippings. 

Remove bacon from pan and drain on paper towels. 

Add onions and peppers to drippings in pan and sauté until tender, about 5 mins. 

Add beans, barbecue sauce, brown sugar, Balsamic Vinegar, mustard, mix well and bring to a simmer. 

Pour beans into a greased 13-by-9-inch (or similar size) oven proof pan. 

Top with bacon and bake until beans are bubbly and sauce is the consistency of pancake syrup about 2 hours.  

Let stand to thicken slightly and serve.
