Herbes de Provence Cauliflower Soup
Ingredients:
- 2 Tbsp. Herbes de Provence Olive Oil, plus more for drizzling
- ½ onion, diced

2 garlic cloves, crushed
- 1-2 sprigs fresh thyme
- 1 cauliflower, chopped into florets
- 1 starchy potato, peeled and chopped small
- salt and pepper

5-6 cups vegetable broth
- salt and pepper
Instructions:
- Heat the Herbes de Provence Olive Oil in a large soup pot.
- Add the onion, garlic and thyme sprig. Stir and cook for 2 minutes.
- Add the cauliflower and potato and stir. Add salt and pepper and cover with broth.
- Cover the soup with a lid and simmer for 15-20 minutes or until the cauliflower and potato are cooked through.
- Place soup in a blender and blend until smooth, or blend with a hand blender.
- Taste, check to see if more salt & pepper are needed.
- Serve hot with an extra drizzle of Herbes de Provence Olive Oil and slice of fresh crusty bread or cheesy garlic toast!
