1 garlic clove
1 egg yolk
1 Tbsp Awesome Sicilian Lemon White Balsamic Vinegar
Pinch dry mustard or 1 tsp Dijon Mustard
¾ c mild or medium intensity Awesome Extra Virgin Olive Oil
Salt (to taste)
Makes 1 cup
- In a bowl of a food processor or blender, combine the garlic, egg yolk, balsamic and mustard. Pulse until the mixture is fully combined.
- With machine running on low, add a few drops of the olive oil until emulsified then begin to slowly drizzle the remaining oil.
- Continue to pulse as the oil emulsifies and makes a white creamy mixture.
- Season to taste with salt.
*Store in an airtight non-reactive container such as a mason jar in the fridge for up to 3 days.
Basil Aioli – substitute half of the EVOO with Awesome's Basil Infused EVOO and 1 Tbsp of fresh chopped or torn basil leaves. (Perfect with chicken).
Chipotle Aioli – substitute half of the EVOO with Awesome's Chipotle Infused EVOO (Great as a burger or sandwich sauce or as a dip).
Roasted Garlic Aioli – heat oven to 350F, peal 3 garlic cloves and wrap in foil pouch or ramekin and drizzle with 1 tsp of Extra Virgin Olive Oil and a small pinch of salt. Seal foil pouch or seal ramekin with foil top or ovenproof lid. Roast for 25 mins or until soft. Let cool and mash with fork. Substitute roasted garlic for 1 garlic clove in above recipe. (Awesome on everything!).
Truffle Aioli – drizzle in 1 Tbsp of Awesome's White Truffle Infused EVOO after all the mild or medium EVOO has been added and emulsified. (Awesome with baked potatoes, eggs benedict, on a gourmet burger, roasted veggie's or as a dip for french fries.)
Horseradish Aioli – add 1 Tbsp of prepared horseradish to above recipe. (Awesome with anything Beef!)
